Doo Dad’s, aka: granola bars

It’s definitely summer. The temperatures are rising, the pools are open, the days are getting longer, the shorts are getting shorter, and my kitchen seems to be filled with children all hours of the day. It seems like someone is always hungry or needing a snack. I know that it’s summer and kids are going to want the sweet summer treats that go along with it. However, I want to have some healthier alternatives on hand for them so that not only do they feel better, but I feel better as well. My mom is one of the best cooks that I know. She can go to any restaurant and not only duplicate a dish, but make it better. She shared this recipe with me, and I am going to share it with you. I made these today for my family and they were a hit.
Tonya’s Doo Dads
aka: granola bars

2 cubes (1 cup) real butter, melted
2 cups packed brown sugar
2 large eggs
2 cups of old fashioned rolled oats
2 cups of Whole Wheat flour

In a medium bowl beat, butter, sugar, and eggs until light and fluffy. Next, add rolled oats and flour, and beat until combined. Optional; add chocolate chips, nuts, or coconut. Bake in a greased 9 x13 pan at 350 for 22 to 25 minutes. Let cool completely before frosting. Cut into 30 bars and freeze for individual use.

Chocolate Frosting

2 cups chocolate chips (I like to use half semi sweet, half milk chocolate)
1/3 cup peanut butter

Put chocolate chips and peanut butter in a microwave safe bowl on high for 60 seconds and stir. Cook for an additional 30 seconds if needed. Spread on cooled bars and let cool in fridge completely for easier cutting.

How they got their name: My mom started making these 43 years ago for my dad to take on fishing trips. He would always forget what they were called and would ask my mom where the Doo Dads were, and the name stuck.
