This is another family favorite. I keep them in the freezer for a healthier quick snack. Everyone that tries them, asks for the recipe. Energy Balls
1/2 cup natural peanut butter
1/3 cup honey or agave
1 tsp vanilla
Mix the above ingredients in a medium size bowl using a hand mixer. This prevents the vanilla from clumping in the dry ingredients.
1 cup rolled oats
1 cup unsweetened coconut
1/2 cup ground flax
1/4 cup chia seeds
1/3 cup mini chocolate chips
Add the above ingredients to the peanut butter mixture and mix well. Roll into balls and store in the freezer. It may seem a little dry but will stay together once it is frozen.
