Baked Oatmeal

As you will be able to tell, my family goes through a lot of rolled oats. I buy it in 25 pound bags. This recipe was shared with me during a family camping trip with one of my husbands cousins. It is one of my kids favorite, breakfasts.

Baked Oatmeal
3 cups rolled oats
3/4 cup brown sugar, I substitute Sucanat (organic brown sugar) if I have it.
1/2 cup butter melted
2 eggs beaten
1 1/2 cups milk
2 tsp baking powder
1/2 tsp salt

In a medium microwave safe bowl, melt butter, add brown sugar and stir to dissolve slightly. Add Milk, eggs, baking powder, and salt and stir with a wire whisk. Last, add the rolled oats, stir, and pour into a greased casserole dish. Bake at 375 for 25 to 30 minutes. You can top with fresh berries, milk, or a little spray cream. Enjoy.
