Oatmeal Craisin Cookies

This is recipe that I found in a magazine, but changed it up a little to make it healthier. It is seriously my husband’s favorite. I have never had anyone try them that hasn’t asked for the recipe.
Healthier Oatmeal Craisin Cookies

1 Cup Olive Oil
1 Cup Real Butter
2 Cups Sucanant (organic brown sugar)
3 Large Eggs
3 TBSP Honey
1 TBSP Vanilla
1 1/2 tsp Sea Salt
8 Cups Rolled Oats
4 Cups Brown Rice Flour
8oz Craisins

Preheat oven to 350, and line 2 baking sheets with Parchment Paper
Mix the Olive Oil and Butter until combined.
Add the Sucanant and cream together until smooth. Add the eggs, honey, vanilla, and salt and mix until smooth and creamy.
Add the rolled oats and combine well.
This is where I switch to my cookie paddles if I am using my Bosch mixer. If not use your hands and then add the flour and mix until combined.
Add the Craisins and mix again.
Use a medium size cookie scoop and put on the pan.
The dough will be fairly dry so pack the scoop and then once it is on the cookie sheet flatten it out with your hand or the bottom of a cup.
Bake for 8 to 10 minutes, or until desired brownness. Transfer to cooling rack to cool.

Makes approximately 6 dozen small cookies.
