Oatmeal Craisin Cookies

This is recipe that I found in a magazine, but changed it up a little to make it healthier. It is seriously my husband’s favorite. I have never had anyone try them that hasn’t asked for the recipe. Healthier Oatmeal Craisin Cookies 1 Cup Olive Oil 1 Cup Real Butter 2 Cups Sucanant (organic brown sugar) 3 Large Eggs 3 TBSP Honey 1 TBSP Vanilla 1 1/2 tsp Sea Salt 8 Cups Rolled Oats 4 Cups Brown Rice Flour 8oz Craisins Preheat oven to 350, and line 2 baking sheets with Parchment Paper Mix the Olive Oil and Butter until combined. Grilled Chicken Salad with Raspberry Orange Dressing

I had this salad for lunch today and it was delicious! My 13 year old daughter made the dressing, which is my new favorite. It’s lite and citrusy, perfect for a hot summer day. These are the amounts I used for my own salad. You can increase the amounts to make a larger family style salad. Fresh Romain Lettuce 6oz Sliced Almonds 10 grams Feta Cheese 10 grams Grilled Chicken 4oz 1 Tablespoon Orange Poppyseed Dressing I soaked my chicken overnight in my favorite summertime marinade, (pictured below), before grilling. It pairs well with the flavor of the dressing.
