Love Avocado, but Hate that they Brown so Easily?

The reason avocados turn brown, is that they oxidize when exposed to air. You can’t completely stop this process, but here are a few tips to slow it down a little. 1. Use a ceramic or plastic knife to cut your avocado. The metal will actually accelerate the oxidation process. 2. Rub a little lemon or limejuice around the exposed flesh to delay browning. Lime is my favorite. If you’ve already sliced it squeeze the juice over the avocado and store in an airtight container, in the refrigerator. 3. If you don’t have a lemon or lime, you can use oil to rub on the exposed flesh. 4. Store in a container that is as airtight as possible. Eat This, Lose Weight?

Eat this, lose weight? I think this was the subject line of three emails in my inbox this morning. It’s funny how as a society we are all looking for that one thing that will change our lives, make us lose weight, and end up looking like a super model. The truth of the matter is that we are actually the sum of many different parts, and everyone of us is different. There is not one thing that will lead us to where we want to be, but many, many little things that we do each day that will put us on the path to success. Baked Oatmeal

As you will be able to tell, my family goes through a lot of rolled oats. I buy it in 25 pound bags. This recipe was shared with me during a family camping trip with one of my husbands cousins. It is one of my kids favorite, breakfasts. Baked Oatmeal 3 cups rolled oats 3/4 cup brown sugar, I substitute Sucanat (organic brown sugar) if I have it. 1/2 cup butter melted 2 eggs beaten 1 1/2 cups milk 2 tsp baking powder 1/2 tsp salt In a medium microwave safe bowl, melt butter, add brown sugar and stir to dissolve slightly. Add Milk, eggs, baking powder, and salt and stir with a wire whisk. Last, add the rolled oats, stir, and pour into a greased casserole dish. Bake at 375 for 25 to 30 minutes. You can top with fresh berries, milk, or a little spray cream. Enjoy.
